Switch to username instead email

Using emails without '@'s causes the actual logins to use username instead of email so switch to setting username (and email as a copy) to guarantee login will work.
GitLab will be updated on 2-Sep-2025 between 12:00 and 13:00. There may be small periods of service instability.
