Added some new modules and the gin admin theme. Installing VBO and schema_metatag modules as default, and making Gin the default admin theme.

Added config folder with an exported content type to see if it will install the content type upon site install.

Updated themes in info file to include Olivero. Added .install file for setting default themes. Added links.menu.yml for setting up initial menu links.

First check in of profile info.yml file with initial module installs. Tested on local Drupal 9 sites and confirmed as working.
