Review Card Client defaults and documentation

Review Card Client default configuration (as provided in the repo) to make sure this is a configuration we want to promote.

Update documentation, so that users can understand the lifecycle of a card (stages) and when they will receive them in the feed depending on their state and their card client configuration. The requirement is for a user to fully understand the consequence of changing the card client configuration.
