Ensure name interpretation functions correctly after Lookup ldap name remapping

Alongside https://gitlab.developers.cam.ac.uk/uis/devops/iam/ibis/ibis/-/issues/40 ensure that the gsuite sync correctly makes use of the name fields that are exposed within ldap, and remove any redundant code now that first name and surname are now fully visible.
